Twickenham Fine Ales are a 40HL brewery in SW London with around 400HL brewing capacity. We package into cask and keg on site we also package into bottle offsite. We are now recruiting for a Head Brewer to oversee all aspects of production. The following areas you would be responsible for are:

  • Managing a small production team production
  • Train, guide, and grow the brewing team to ensure they are efficient and well- rounded brewers
  • Create and maintain a method of continuous improvement of wort and beer quality and consistency
  • Monthly meetings with 2 directors
  • Maintaining our current SALSA accreditation
  • Maintaining and updating all aspects of HACCP
  • Hop Contracting/Malt contracting
  • Stock Control/Ordering/Chemicals using Brewman Software
  • Collecting samples for lab analysis
  • Live yeast management and handling
  • Brew on our 40HL brewery
  • Packaging cask on a two head automatic filler
  • Packaging keg on a 3 head washer/filler
  • Filtration when required
  • Recipe Development
  • Cellaring work
  • CIP
  • Weekend checks on a Rota system
  • Monthly tour
  • Internal/External events
  • Attend LBA and SIBA meetings

The brewery runs either one or two shifts per day depending on the time of year. Due to our location in Twickenham we have peak periods during Nov and Jan-March as well as the usual busy beer times. During busy periods we run two shifts. Shifts can be 8am till 5pm or 4am – 1pm and 12pm till 9m. This Rota is done in advance by the head brewer. The head brewer will usually take part in either the early or the late shift.

Desired Experience

  • Heriot Watt MSc/IBD Diploma
  • 7+ Years’ experience in brewing or Brewing plus a mixture of other relevant fields including distilling, chemical engineering, beverage production.
  • Fork truck license preferred
  • Clean driving license

Contract hours are 40hrs/week but flexibility is essential. Salary is dependent on experience. The position comes with 28 days holiday including bank holidays. This rises by 2 days every 2 years until you reach 36 days. The company provides a pension scheme as well as overtime for hours outside the contracted 40 hours per week.
